Butternut Squash Soup

1. Take one butternut squash, slice in half and remove seeds and gross stringy stuff.

2.) Put Squash in a baking pan with some water (water should not cover squash, you only need about an inch).

3.) Put cinnamon, brown sugar, and salt on the squash and bake at 400 until the squash is soft (apx. 45 mins)

4.) Take half a white onion and two cloves of garlic and saute.

5.) Add squash and 4 cups of chicken broth, and black pepper and let soup boil for about 25 mins.

6.) If you like the soup more creamy, take half of it and blend it and then add it back the the rest of the soup.

I make this dish all the time and my roommate luves it.  It’s super simple and a great way to start a meal!
