So these are Montreal style bagels. Basically they’re boiled beforehand and then  baked in a wood oven so they take on a nice chewy texture. If i’m not mistaken, they’re usually made with a touch of honey too so they’re ever so slightly sweet. Having grown up on them, to me all other bagels just taste like buns with holes in the middle. They’re a little tricky to find in Toronto, but my dad usually gets them from Bagel House in the Jewish area.
